Like previous years, the festival will focus on authentic Louisiana cooking. Guest chef and Louisiana native Brett Harris returns -- boiling fresh crawdads flown in overnight direct from the bayou. Other staples include mouthwatering jambalaya, boiled shrimp, red skin potatoes and corn on the cob.
